CHIU CHOW FLAVOURS
The Chiu Chows – from eastern Guangdong – are known for their marinated meats. Many of them first came to Hong Kong as labourers, landing at what used to be “Triangle Pier” in Sheung Wan at Queen Street. Sang Kee was the first to sell Chiu Chow marinated pork at Queen’s Road West. In the old days when food was scarce and life was tough, hard-working Chaozhou migrants in Hong Kong preserved foods by treating them with a lot of salt. That is why Chiu Chow cuisines were traditionally salty.

The secret to the dish’s flavour is in the marinade. Mr. Li wakes up at 6am every day to prepare the special sauce that has earned him his stellar reputation! “The sauce is a mix of fish and soy sauce. We do not use salt or additives. It may be more expensive but the taste is better and you won’t feel thirsty eating our food” he says.
This chopping board once was very thick, every time it gets dirty we peel off a layer. Now it’s become this thin. 「這塊砧板用了很多年，原本是很厚的。弄髒了就削去面那一層，又可以繼續用。削下削下就變成這樣薄。 」
